Origin and caracteristics
Wheat probably originates from Asia. It has been part of our diet since more than 12000 years and it is still a staple food nowadays. Actually, wheat represents a little more than 75% of the cereal consumption in Canada.
Whole wheat bread flour is produced with hard spring wheat ground on millstones. From 100 kg wheat grains, 98 kg whole wheat bread flour is extracted. The gluten of this flour is strong which makes it appropriated for breads.

Ingredients
|
| 2 tablespoons |
dry yeast |
30 ml |
| 1 tablespoon |
honey |
15 ml |
| 4 cups |
warm water |
1 L |
| 5 à 6 cups |
whole wheat bread flour |
1.25 à 1.5 L |
- Add the yeast and honey to water. Let react the yeast a few minutes.
- Add the whole wheat bread flour and mix to develop the gluten.
- Knead the dough about 10 minutes.
- Cover and let rise at a temperature of 40°C during 45 to 60 minutes.
- Fold the dough and divide in 3 parts.
- Knead to shape the dough in 3 breads and place in greased bread pans.
- Let rise for 30 minutes.
- Bake for 45 to 50 minutes in a preheated oven at 375°F.
