Origin and caracteristics
Sesame is native from Africa and India. An Assyrian myth even tells that the Gods drank sesame wine the eve of the Earth’s creation. When sesame seeds are mature, the pod suddenly bursts and opens. That’s probably what inspired the famous magic formula of Arabian tales: “Open sesame!”.
Hulled sesame seeds should be kept in the refrigerator because they spoil more rapidly than whole sesame seeds.
